As 2017 draws to a close we started to reflect on some of the big food trends of the year and some predictions for what's cooking in 2018. This year zero waste has been a big theme, using food just slightly past it's best before and using up every bit or the vegetable/fish/animal has been advocated by everyone from celebrity chefs to Supermarkets. Low and no alcohol has been a big turning point in drinks and this looks set to continue in 2018 (look out for our POV on this in early 2018). Insects have been appearing on menus a source of plentiful protein. Fermented vegetables (Kimchi) has been a big trend - super healthy and a brilliant way of ensuring zero waste.
As we look forward to 2018 some of these trends will continue, we can see the lust for insects becoming more mainstream and of course zero waste will always be on the agenda. Millennials will continue to influence trends with sustainability and clean eating (plant based foods) central to their beliefs.
Regional food will become more specific instead of "Italian Food" people will be looking for "Sicilian". We also predict that trends towards more simplistic cuisine could elevate German food beyond sausages, you heard it here first!!
Besides that our viewing habits will influence how we cook, Netflicks 'Stranger Things' has lead to it's own cookery show! The Statesman calls this "screen to table" and there are cookery books emerging based on popular shows and even video games!
